A pound cake with an added twist. Made with rice flour, this Lemon Pound Cake is gluten-free and offers a mochi-like chewy and moist texture.
Lemon Pound Cake (350mL Cake Mold)
- 2 eggs
- 80g unsalted butter
- 80g granulated sugar
- 10g honey
- 80mL milk
- 1 lemon (zest + decoration)
- 150g rice flour pancake mix
Prep Work
- Bring butter to room temperature to allow it to soften.
- Place a cooking sheet into your cake mold.
- Grate half a lemon for zest.
- Preheat the oven to 350 degrees Fahrenheit.
1. Place butter and sugar into a bowl and mix well. Beat the eggs in a separate bowl and add slowly into the butter and sugar.
2. Add honey, milk, and lemon zest. Incorporate well.
3. Add the pancake mix in, and use a rubber spatula to fold in well.
4. Pour the mixture into the cake mold, and bake at 350 degrees for 35 - 40 minutes. Allow time to cool and enjoy.
