But first and foremost, it’s my home and where I feel most comfortable. For a chef like me, the produce and the incredible quality is overwhelming – you don't have to go far before meeting the local fisherman or slamming the breaks on to harvest a crop of chanterelles.” This is Mr Waugh’s in-the-wild recipe for scallops: - Use dived scallops, which are the most sustainable way of fishing for scallops, helping to protect the seabed and the ecosystem. - To shuck the scallops, all you need is a butter knife and spoon. - Push the knife through the gap at the hinge and slide it up the flatter of the two halves to open it up. - Spoon the contents out. You only need the white muscle, the foot (red/ orange bit) is optional. Throw away the rest. - I like to eat them very simply, so fry with rapeseed oil, chunks of garlic, a squeeze of lemon juice and a handful of coriander. Mr Waugh wears a full look by @mrp.
