Preheat oven to 350 F  2. Place the olive oil, garlic, onion, parsnips, celery, pumpkin, sage, curry powder, cinnamon, red pepper flakes, and salt in a medium bowl and toss to coat. Spread evenly on a parchment-lined sheet tray and place into preheated oven. Roast for 45 to 60 minutes or until vegetables are cooked thoroughly.  3. Remove from the oven and cool slightly. Place vegetable stock and coconut milk into the Vitamix container and add the roasted vegetable mixture. Secure the lid.  4. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 6 1/2 minutes, or select the Hot Soup Program if your machine is equipped.
