At the same point making this recipe I always swear it off—too scary. But then the two loaves disappear, kids are happy, and I dive back in for more existential angst. I can’t quit you, Bagel Bread.

Ingredients:
2 1/2 cups warm water
4 Tbsp honey
1 1/2 Tbsp yeast
1 1/2 Tbsp kosher salt
5-5.5 cups bread flour
Water Bath: 4 qts water, 1/4 cup honey, 1 Tbsp baking soda

Directions:
1. Bread— in bowl of a stand mixer with dough hook, combine water, honey, yeast, salt and 2 cups flour. Mix until combined. On low speed, add flour until dough comes together and clears the sides of the bowl (it will be a little tacky). Knead for 5 mins.
2. Cover bowl and let rest 10-15 mins.
3. Turn dough onto lightly floured counter. Separate into 2 pieces.
4. Shape each piece into a loaf—press into thick rectangle, fold bottom edge up to middle, fold top edge over the dough, pinch seam to seal. Turn loaf seam side down and pat/roll lightly to form 8 inch loaf.
5. Grease two 8.5x4.5 inch loaf pans. Place loaves seam side down in pans. Cover and let rise until dough is just over edge of pan (45-1hr).
6. Near end of rising, prepare water bath and preheat oven to 350º. Bring water to boil in a pot at least 10 inches wide. Add honey and baking soda and stir to dissolve. Fold a clean kitchen towel (no texture) in half and place next to stove.
7. Separately, turn loaf of risen dough into your hand and place into boiling water (I KNOW!). Loaf may deflate and look wonky. Cook for 1 min and then flip. Cook another 45secs-1min.
8. Using two wide spatulas, transfer loaf to towel and quickly pat away water on tops or sides.
9. Spray loaf pan again with cooking spray and transfer boiled dough, tucking down around edges in an even shape.
10. Repeat process with other loaf.
11. Cut 6 slashes, 1/4 in deep, crosswise on top loaves.
12. Bake ~45 mins until golden on top (200º at center).
13. Let cool for 15-20 mins in pans. Turn onto rack to cool completely.
14. Yum.
