Rye berries. Fermented, cracked, soaked and sprouted. They'll all turned into majestic pumpernickel bread I just pulled out of oven after 26 hour low temperature bake.

You can't imagine the smell in the bakery right now. From what I see it's the best batch I made so far.

Forever grateful to @ecoleinternationaleboulangerie for paasing the knowledge how to make this amazing, forgotten bread.
