Had some leftover roast red chicory and fennel (both cooked in the same way, in a hot oven, with dry white vermouth, olive oil and Maldon salt) to which I added some of those lovely Brindisa chick peas in a jar, and topped with a beautiful piece of cod from @rex.goldsmith (also cooked in a hot oven with dry white vermouth and olive oil!) and green sauce. Heaven.
