Crispy ravioli with mushrooms

500g ravioli of your choice,
500g squash, peeled and cut into 1cm cubes
200g cherry tomatoes, halved
300g baby chestnut mushrooms, halved
3 tablespoons olive oil
20g sage leaves
1 teaspoon sea salt
Freshly ground black pepper

1 tub fresh bought basil pesto
1-2 tablespoons extra virgin olive oil
1/2 lemon, juice only
Sea salt flakes, to taste

1. Preheat the oven to 200C fan/220C. Put the ravioli in a bowl, and pour over a kettleful of boiling water. Leave to stand for 2 minutes before draining well.

2. Mix the ravioli with squash, cherry tomatoes, mushrooms, oil and sage leaves in a large roasting tin. Season well with the sea salt and freshly ground black pepper, then transfer to the oven to roast for 30 minutes.

3. Meanwhile, mix the fresh pesto with the olive oil, lemon juice and salt, taste for seasoning, and set aside.

4. Serve the crispy ravioli with the dressing drizzled over.
