Ingredients (10x6x2 glass pan)

(Poached pear)
3 D'Anjou pears (Peeled, halved and cored)
400ml Water
130g Sugar 
1 tbsp Lemon juice 

(Poaching liquid jelly)
Reserved poaching liquid
5g Gelatin powder
30ml Water

(Coconut pudding)
1can(400ml) Coconut milk or cream
100g Sugar
100ml Heavy cream
1 tsp Vanilla Extract
7g Gelatin powder
30ml Water 

1.Poach the pears.
Combine the water and sugar in a medium pan. Bring to a boil, add the pears and lemon juice.
Lower the heat and simmer them for 5-10minutes.
Let cool.

2. Make the coconut pudding.
Pour water in a microwaveable glass cup and sprinkle gelatin powder. Stir and set aside until soften. 
Combine the coconut milk and sugar in a bowl, whisk until combined. Add heavy cream and then add vanilla and mix until combined.
Microwave gelatin at full power for 30 seconds and then stir to dissolve.
Whisk in coconut milk mixture and mix well. Pour into a glass pan and refrigerate until set.

3.Drain the poaching liquid through the fine-mesh sieve into a bowl.
Pour water in a microwaveable glass cup and sprinkle gelatin powder. Stir and set aside until soften. 
Microwave gelatin at full power for 30 seconds and stir to dissolve.
MIx into poaching liquid and whisk until combined. 

4. Place pears and pour half of jelly mixture. Let jelly set for 10-20 minutes. Place edible flowers and mint leaves (optional) and pour over the remaining mixture.
Refrigerate until firm.
