I hope everyone is having a beautiful Sunday! I got a lot of requests for this carrot ginger soup so I’m sharing the recipe. It is so bright, tangy, creamy, healthy and delicious. My kids love it too. Enjoy! 🥕🥕🥕Sauté 1/2 cup onion in 2 TBLS coconut oil, add 4 cups carrots, 4 cups veg broth, 1 cup orange juice, 1 TBLS grated ginger, and a squeeze of lemon. Simmer for 20 minutes, purée and then return to pot and stir in 1 can of coconut milk. Salt and pepper to taste. 😘
