Partnering with Michael Fiorelli, a friend and well-known LA chef in his own right, the duo will be pulling ricotta and fennel sausage from Fiorelli’s Italian American upbringing and acids, heat, and seafood from Zarate’s youth spent in Peru.  There’s dishes like beef tamal, arroz con pollo, ceviche mixto, and tallarines verdes; a pasta dish consisting of handmade tagliatelle with Peruvian pesto, sautéed king oyster mushrooms, and parmesan. The project is currently slated to run as a two-month residency, though that could change. In the meantime, the pair are just happy to be cooking on their terms. “We just get to show up and have fun and learn and cook,” Zarate says.
