Corned Beef Potato Toast
Serves 1

INGREDIENTS
1 potato
A:
80g corned beef
2 tablespoons mayonnaise
Salt, to taste
Pepper, to taste
1 slice of bread (6 slices)
1 egg

PREPARATION
1.Peel the potato and wrap it in plastic wrap. Microwave it at 600W for 4-5 minutes, or until a skewer can easily pierce through.
2. In a bowl, lightly mash the cooked potato from step 1. Add the ingredients from A and mix well.
3. Place the mixture from step 2 on top of the slice of bread, spreading it to create a hollow in the center.
4. Crack an egg into the hollow of step 3. Place it in a toaster oven and bake for approximately 12 minutes.
5. Once cooked, the corned beef potato toast is ready to serve!
6. Enjoy!
