I have been exploring to make best dashi. Now in Rausu, Hokkaido. World heritage peninsula to find out the best Konbu to make our 2023 dashi. It’s absolutely mind blowing, insane to try 5 year old konbu here. I need to go back to my kitchen to start making new dashi now 😎
