Feta eggs just got better 🍳 Whether you've tried the #FetaEggs trend or not, you need to give this version a go. Wrapped up with smashed avo, tomatoes and chorizo, it's the perfect bank holiday brunch. Find the recipe below.

Takes 10 mins

1 avocado, mashed
2 mini tortilla wraps
100g feta
6 cherry tomatoes, quartered
6 chorizo slices, thinly sliced (optional)
2 eggs
pinch chilli flakes, to serve (optional)

1. Mash the avocado with a fork and season with salt and black pepper; set aside.
2. Heat a non-stick frying pan to a medium-high heat. Toast the wraps until lightly golden on both sides. Wrap in foil or a clean tea towel to keep warm whilst you make the eggs.
3. Crumble half the feta into the pan in a circular shape, roughly the size of a fried egg, along with half the cherry tomatoes and chorizo slices (if using) then crack an egg into the centre. Season with pepper, cover with a lid and cook for 3-4 mins until the egg is just set and the feta is golden and crispy round the edges.
4. Spread half the avocado over one of the wraps and top with the crispy feta egg. If you like some heat, sprinkle over a pinch of chilli flakes. Repeat with the remaining ingredients to make another.
