Hainan Chicken (EASY VERSION)

Anybody else gain 30 pounds over the pandemic and simply cannot lose it? Just me? 😐

Chicken breast, it is.

Anyway, I like this recipe because you’ll be finished poaching the chicken and making two sauces by the time the rice is done.

It’s quick. It’s simple. It’s not authentic, but it works!

P.S. if you don’t mind chicken breast or you’re working with the far superior legs and thighs, you can throw all of it into the rice cooker & have a one-pot meal 💡

INGREDIENTS
1 cup uncooked rice
1 liter chicken broth
2-4 chicken filets (I recommend thighs)
1/4 lb ginger
2 bunches scallions
3 cloves minced garlic
Salt/MSG
1/4 cup avocado oil
2 tbs light soy sauce
2 tbs dark soy sauce
2 tbs oyster sauce
2 tbs maple syrup

INSTRUCTIONS
1. Using a rice cooker, add washed rice with 1.5 cups of chicken broth, a few slices of ginger, scallions, all of the minced garlic, and a pinch of salt
2. Meanwhile, sauté 7-8 slices of ginger and scallions in a small pot with avocado oil
3. Once fragrant, add chicken broth, and 1 tsp salt
4. Bring to a rapid boil, add chicken filets, remove from heat, cover, and set the timer for 45 minutes
5. Meanwhile, make the sauces - mince the rest of the ginger and scallions while heating up 1/8 cup of avocado oil, add the hot oil to the raw ginger and scallions, add 1/4-1/2 tsp salt
6. Sweet soy sauce - using a small pan, bring the light soy sauce, dark soy sauce, oyster sauce, and maple syrup to a light boil
7. Remove poached chicken filets from the soup & slice
8. Serve with rice and sauces

Enjoy with a side of gratitude (even if you only have white meat in the fridge today) 🤍🤪
