New Series! Easy Toddler-Approved Whole Family Recipes 🍝
This household still loves the feta pasta! Now that Levi is eating what we eat, I’m always looking for ways to add some extra nutrients to my favourite dishes. Today I added salmon, spinach (halfway through) and used chickpea pasta (more protein, fiber, & iron).
Ingredients:
-1 block of feta cheese
-cherry &/or grape tomatoes
-salmon (sliced into bite sized pieces)
-4 garlic cloves, smashed
-spinach
-olive oil
-pepper
-salt (optional: I didn’t add any)
-1 box of pasta (I used chickpea rotini)
Method:
-Pre-heat oven to 400F or 205C
-add some olive oil to a baking tray
-add your feta cheese, tomatoes, garlic, & salmon
-drizzle more olive oil on top
-add pepper, salt (if using it), and any seasoning you like
-bake for 40 minutes, adding spinach (tossed with some olive oil so it doesn’t burn) halfway, until the cheese is golden and the tomatoes are bursting.
-crush and mix everything
-add your pasta and mix together
