Banana Pancakes! Vegan, delicious and perfect for #healthyeverydamnday 😊
2 cups almond milk (home made, preferably)
1 1/2 cup buckwheat flour
10 pitted dates
A pinch of vanilla powder
1 1/2 tbsp baking powder
1/2 tbsp Himalaya salt
Cinnamon to taste
2 ripe bananas
Put the almond milk, dates and vanilla in a blender and blend until smooth. Put the buckwheat flour, baking powder, salt and cinnamon in a bowl and mix well. Add the almond milk mixture to the flour and blend until you have a thick batter. Slice the bananas up and blend in. Now, heat up a pan with some coconut oil and start cooking! Cook the pancakes until golden and then flip. When they're ready, serve with fresh pineapple and agave syrup. Enjoy!
