For my 20th #BandWidowDinner, my mom and sister came by to give me some company while @thecringe was playing in #Canada. Spanish-style skirt steak pinwheels.
Steak: Pound steak. Season with salt and pepper. Dress with garlic, a pile of flat-leaf parsley tops, grated Spanish chorizo, and shredded manchego. Roll them. Brown on each side in olive oil. Finish in the oven. Douse with roasted lemon juice and top with romesco sauce.
Romesco sauce: 1 large roasted red pepper (mild) + 1 large red chili. Peel, and then pulse in the processor with ¼ cup Marcona almonds, small handful of flat-leaf parsley, 1 large clove of garlic, 2 tablespoons sherry vinegar, 1 teaspoon smoked sweet paprika, ⅓ cup EVOO, and salt. Good on any protein or charred bread!

Shallot sherry green beans: Melt butter into olive oil, add lots of shallots, and cook til it’s light caramel in color - about 20 min on medium-low. Add salt, pepper, and thyme. Raise heat. Add sherry. Reduce out and add chicken stock and blanched green beans cut on a bias. Serve tender and crisp.

A summer obsession - pimiento corn. Grill up to 12 ears of corn for a batch. Make your cheese topping: 4 oz pimientos (drained), 3 oz. brick of cream cheese, 1 large clove of garlic, 1½ cups shredded sharp yellow cheddar (I use a kind with jalapeno in it), 1 teaspoon smoked Tabasco sauce, and 1 teaspoon Worcestershire sauce. Slather on hot corn!
