Sweet Potato Breakfast Skillet

Ingredients:
1 tablespoon coconut oil
1 tablespoon Flavorgod Garlic & Herb Pink Salt
Flavorgod Pink S+P to taste
2 large sweet potatoes, diced
5 cage free eggs
3 medium zucchini, diced
1 jalapeno, sliced
1/2 red onion, chopped
1 red bell pepper, chopped
4 strips cooked uncured apple smoke bacon, chopped

Directions:
Preheat oven to 400F.

In a 8-inch cast iron skillet heat coconut oil on medium-high and carefully place the diced sweet potatoes in the hot oil. Season with Flavorgod Garlic & Herb Pink Salt and Flavorgod Pink S+P to taste. Cook the sweet potatoes until cubes start to turn golden brown. Increase heat to high and add the zucchini, onion, jalapeño and bell pepper to the skillet. Cook until the vegetables are just starting to soften. Stir in bacon pieces. Remove from heat.

Make 5 indents in the potato and veggie mixture, break one egg into each indent. Place skillet in the oven and bake 15 to 18 minutes, or until the eggs are at desired doneness. Add additional Flavorgod S+P to taste. Serve immediately!
