Cooking in a cast iron skillet can achieve a crispy end tasty outer crust like these from Natasha and my FlavorGod Pink Salt and Pepper ??‼️?

1 package chicken thighs, bone-in, skin-on
2 tbsp cooking fat (ghee works great!)

Season both sides of chicken thighs with pink s+p. Heat a cast iron skillet over medium for about 5 minutes. To check to see if pan is hot enough, sprinkle some water and see it dances. If so, add cooking fat. Add in chicken thighs skin side down and cook for approx 5-7 minutes. At this point, you may want to cover the skillet with a splatter guard if you have one! Flip chicken over and cook another 5-7 minutes. You can transfer skillet to a preheated 350F oven to finish cooking in there, or flip a few more times on top of stove until temp reaches 165F. Remove from heat and cover thighs with tented foil for about 5 minutes to rest. Then dig in and enjoy!!
