Working at a museum is wonderful, but it does require the occasional sacrifice. For example, we had to try this tomato aspic, made from a 1930s recipe. Aspics are congealed salads that use broth, meat stock, or consommé.
Heather on our team observed: "Gelatin rings were so popular that the cookbook assumed you knew how to turn out a ring. Today we aren't so used to gelatin-infused foods." No, no we are not.
