Photograph by George Steinmetz @geosteinmetz // Planting lettuce in a rotating hydroponic farm just west of Tokyo. The seedlings are placed in the center and the plants slowly rotate for a month before reaching the outer edge where they are harvested. Their roots are nourished by water laced with phosphate and other minerals. I was told that their hydroponic method results in a slightly sweeter variety of lettuce. They harvest daily, and year round, with slightly smaller plants during the winter. This system was developed in the aftermath of the nuclear disaster at Fukushima, where there was a demand for fresh vegetables but no safe soil to grow them.
