Lemon Pepper Zoodles (serves 4 :: 20 min cook time)
.
INGREDIENTS
3 tablespoons olive oil, divided
1 pound asparagus
4 medium zucchini, spiralized
Juice and zest of 1 large lemon
1 garlic clove, minced
1⁄2 teaspoon freshly ground black pepper
Sea salt, to taste

INSTRUCTIONS
1. Heat a gas or charcoal grill for direct heat. Trim the tough ends from the asparagus. Toss with 1 tablespoon of the olive oil and season well with sea salt and pepper. Place on grill, being careful not drop them between the grates (it's a tricky one if you're like me and don't own a veggie grilling tray).

2. Cook for 2-3 minutes, then flip them for even cooking. Remove from grill and keep warm.

3. Place the zoodles in a large serving bowl and toss with the remaining 2 tablespoons olive oil, the juice and zest of the lemon, garlic clove, black pepper, and a good sprinkle of sea salt.

4. Serve with grilled asparagus on top and sprinkle with Parmesan cheese, if desired.
