One of my all time favorites and go to carb source is the Sweet Potato. It is an awesome mix of complex carbs, fiber, and simple sugars making it a great option pre and post workout. Compared to regular potatoes sweet potatoes have more sugar but also have more fiber, allowing it to sometimes even have a lower glycemic index. Not to mention these potatoes are an amazing source of Vitamin A, Vitamin C, Vitamin B6, and Potassium. Vitamin A will help keep your eyes in check and if you're lacking enough of it can actually suppress your immune system. Another reason I like adding this around my workout is the high antioxidant content like beta-carotene and anthocyanins which help fight inflammation (extremely beneficial post workout.) My tip, the more intense or dark the sweet potato is, the more beta-carotene it contains. Let's keep learning, train smarter and keep evolving.
