I made Cherry Ice Cream with a Peanut Butter Salted Caramel Sauce, 100% plant-based and refined sugar free ? you can watch the video now at Facebook.com/feeluniquebeauty, and as promised, here is the recipe:
- serves 4
Peanut Butter Salted Caramel:
2 tbsp Smooth Peanut Butter
2 tbsp Maple Syrup
4 tbsp Water
Pinch Sea Salt

Cherry Ice Cream:
4 Frozen Bananas
3 Handfuls Frozen Cherries
2 Dates, pitted
2 Scoops Vanilla Plant Protein Powder
2 tsp Berry Powder
Water or Almond Milk to blend

Toppings:
Berries
Desiccated Coconut

To make the caramel, use a fork to whisk the ingredients together in a bowl and set aside.
To make the ice cream, add all the ingredients to a food processor and pulse until the bananas break down. Add a little more liquid until desired consistency, and blend until smooth. Serve in bowls (heart shaped optional!), drizzle with the salted caramel and top with berries and desiccated coconut.
