Homage to spring eating in a bowl, but also a bit under the weather to for anything fancier, and again also, I was out of onions! As you might have seen in the Stories from this morning, I got a whole pack of local, organic produce delivered to home today, which did NOT contain #asparagus. While many of you were kindly answering my question regarding using #FavaBeans pods, I cooked some brown rice in a cup of green tea (I have this bad habit of making tea, then forgetting about it, and it was good way of not wasting a cold cup of green tea). Then I sautéed a finely chopped clove of garlic in a little EVO AND butter — because butter makes garlic sweeter — and added the roughly chopped asparagus stalks, leaving aside the heads for later. After just a couple of minutes, I grated a lemon zest right in the pan, then added its juice, stripped many basil leaves inside together with a couple of zucchini blossoms that came with the zucchini, but were too delicate to survive the day. At last I tossed the cooked brown rice in the pan and served it with a bunch of greens. I would’ve crumbled some fresh “primo sale” cheese on top too, but I forgot. It was surprisingly fresh and rounded in flavor.
