The start of almost any kind of dough: a well of flour with eggs at the center. For our dessert menu at @189bydominiqueansel, we thought about those kitchen foundations and lessons that young chefs learn when they first enter a kitchen, so for “The Well” dish, we’ve created a well of milk granita, with a center of clover honey and passionfruit gelée, set atop salted fennel seed meringue.
