With 10 paper-thin layers, Smith Island Cake is a delicious Maryland dessert traditionally made on Smith Island, a series of low-lying, marshy landmasses in the Chesapeake Bay. It's not comfort food. It's impress-your-neighbors food, designed to be shared at church suppers, fundraisers, and other community events like the one shown here. An ambitious baking project like this one requires an expert to turn this recipe into a piece of cake. On Saturday, November 3, Janice Marshall will demonstrate her technique and also teach us how to make oyster pie. Our #SmithsonianFood History Weekend explores regional foodways.
