Ham, egg and chips with an Italian twist!!!
This dish is so much fun and the panelle chick pea flour chips - crispy on the outside, soft in the middle with rosemary oil - are just so delicious. They're usually served as an antipasto with cured meats, cheese and pickles, or alongside drinks at aperitivo hour, but I've chosen to celebrate them as part of one of my favourite childhood dishes roast pork with bay and vinegar and a fried burford brown egg.
