I had a load of strawberries at home to use, so I decided to make the quickest and easiest strawberry chia jam from my book Eat Smart. Try it yourself! 🍓
3 handfuls strawberries (approx. 12-15)
2 tbsp chia seeds
2 tbsp fresh lemon juice
2 tbsp maple syrup
Roughly chop the strawberries and add to a saucepan with 2 tbsp water. Simmer for about 7 minutes until the strawberries are soft, and then use the back of a fork to mash them. Stir in the remaining ingredients, allow to cool, and then place in a glass jar with an airtight lid. The chia seeds will absorb a lot of the liquid and form a gel consistency, making a delicious thick jam. This will last in the fridge for about 2 weeks. 🍓
