(2/3) “I get inspiration from my staff. I have a really strong, eclectic team and they each have different specialties. Mine is north Italian food. My mom was from Napoli, my dad was from the north region. My dad was the chef in the family, I learned all my cooking from him. But he refused to go into the business. He liked to cook seafood, anything from the ocean. Growing up, we fished and hunted—game, pheasant, rabbit, and so on. Summers were at the ocean and tending to the garden, so all year long, our whole life was based around food. And wine. We used to make our own wine. So we had a lot of friends in town.”
