One very special bread. Rye absolute. Pumpernickel.

Got into the oven in 2019 and left it in 2020 after 24 hour of low temperature bake. Now its waiting and settling and riping, but we were too impatient not to try a bite. Its simply amazing. Pumpernickel was always on top of my favorite breads and learning how to make it at @ecoleinternationaleboulangerie was a highlight of my last baking year. Its my resolution to work more with rye this year and to spread #ryehigh vibes all around. I'm pretty sure that its just a matter of time that rye will become new wheat. Lets make it happen.
