😋This salmon fermentation technique is based on the ancient food culture of the Jomon people of pre-historic Japan. It was developed by food artisan Chieko Yamane who works in Miyako City, one of the centers of Japan’s salmon industry. After the 2011 tsunami, Chieko and her team repaired their workshop and continued on. ❤️
