Don’t brown your meat on the stove top. At home it’s much easier to do it on broil setting with a wire rack or oven safe pot. I hate cleaning up the splatter mess, plus it takes forever to brown on stove top. When meat is sufficiently browned. Drain the grease then scrape off the crusty drippings and add to your braise. It’s one more step and one more thing to clean up, but it will save you time overall. Wire rack isn’t necessary. I usually just cook the whole pot in the oven but it was being used so had to make an audible. Oxtails seasoned with momofuku spicy salt. Today’s oxtail stew was my best yet. Will post recipe later.
