Dandelion flower jam.
The spring is here and it’s already sprinkled drops of sun all over the fields. I couldn’t resist the desire to make dandelion jam. It is a recipe from traditional Russian cuisine and my gramma used to make it . It’s also called “Dandelion honey” as the taste and the texture is very similar to regular honey.
We will need:
400 dandelion flowers
1.2 kg sugar
1L water
1 tbsp lemon juice.

The best time to go dandelion picking is sometime in the middle of the day when they bloom the most. Yellow and fragrant. And all my hands sooooo very yellow))) Of course, pick the place outside of the city.
First thing we need to do is to separate the yellow part of the flowers with the rest. We don’t need green sepals and receptacles, they will add bitterness of milky juice, only yellow petals will go in the jam. The best way is to cut them off with the scissors. Don’t wait too long, the flowers will close later in the day even after they are picked.
After the prep work is done, add water and bring it to the boil. Then turn the heat down and boil on the very low heat for 10 min.
Add the lemon juice and cook for another 30 min.
At that time the entire house will be filled with the pleasant honey fragrance.
Turn the heat off and leave for an hour so all the flavours infuse nicely.
Now we need to filter the liquid. Squeeze all of it out of the petals and their mission is over. We dont need them anymore. Cheese cloth is the best for the filtering, but a strainer will work just as good. The broth looks a dull yellow; and if there are a lot of green sepals, then with a greenish tint.
Mix the sugar in and return it back on the heat. As soon as the liquid boils, it will turn into transparent and beautiful.
Boil on the low heat for another hour. Here you may vary the timing. The thicker texture you want, the longer it needs to boil.
