This week @myfussyeater is back with a delicious and easy recipe for healthier chocolate muffins with some sneaky hidden veggies!

- Ingredients -
150g plain flour
100g wholemeal flour
2 tbsp cocoa powder
1.5 tsp baking powder
0.5 tsp baking soda
50g butter
120g plain yogurt
1 medium egg
1 medium banana (mashed!)
70g honey
2 tsp vanilla extract
1 medium courgette
40g chocolate chips

- Directions -
1️⃣ Preheat the oven to 180c.
2️⃣ In a large bowl mix together the plain flour, wholemeal flour, cocoa powder and raising agents.
3️⃣ Add the butter to a jug and melt in the microwave. Then to the butter add the yogurt, egg, mashed banana, honey and vanilla.
4️⃣ Mix well then pour the wet ingredients into the dry ingredients, mixing again.
5️⃣ Grate the courgette (leaving the skin on) and then squeeze out the water.
6️⃣ Add to the muffin mixture and mix one final time.
7️⃣ Put 10 muffin cases into a muffin tray and divided the mixture between them. Finish off with some chocolate chips on top!
8️⃣ Bake in the oven for 20-25 minutes until cooked through.
9️⃣ Allow to cool for a few minutes in the tin then transfer to a cooling rack.

These muffins are best eaten within 2 days. They can also be frozen and defrosted at room temperature.
