Kashgar restaurants commonly hang sheep carcasses by the entrance to reel in both locals and tourists for the renowned local specialty. For more than 2,000 years, Kashgar has been an epicenter of trade and cultural exchange, strategically located along the Silk Road. Before much of its destruction, Kashgar’s Old City was the “best-preserved example of a traditional Islamic city to be found anywhere in central Asia,” according to architect and historian George Michell. When I was there, in 2009, large sections of the old city were being razed. Today, though just a small section of the original city remains, the vital spirit of the Uyghur people who inhabit the area still can be seen.
