まずはサラダに使われる野菜の種類の豊富さに驚く
さらに一箇所から仕入れることはせず一種類ごとに各地で取り揃えるというとんでもないことをしている

一番印象的だったのが一年通して出される蕪の料理
あえて通年調理法を変えないらしい
時期によって蕪の味が変わる為、調理法を変えずともその時々の季節で味が変わるという面白い一品
みずみずしい蕪ジュースは感動もの
