Preheat oven to 350 degrees 2. Prepare an 8x8 baking pan with coconut oil spray and parchment paper; set aside 3. In a bowl, whisk together melted coconut oil, apple sauce, egg, milk, honey and vanilla 4. Add protein powder, cinnamon, nutmeg, quick oats and flour; mix to combine  5. Fold in grated apples 6. Pour batter into prepared pan 7. Cut the second apple into thin slices and arrange on top of the batter  8. Bake for 35-40 minutes or until fragrant and the sides are golden brown 9. Use parchment to help remove from pan and cut into 9 squares 10. (Optional: For a quick vanilla bean glaze mix together 3 tbs powder sugar, 1/2 tsp vanilla bean paste or extract, and splash of milk.
