Starting the Thanksgiving turkey—first step before putting in oven—salt and pepper to taste; light rub all over with olive oil; half lemon and carrot/onion/celery (mirepoix) in cavity.
After half hour—Helmut basted the turkey with the natural turkey juices—as pictured here. This is a 12lb turkey—325 degrees for first hour and a half. Approx. 2hours and 20minutes total time in the oven.
