Quick and easy brunch! ( my plates are from @west elm )
Ingredients:
- sourdough bread
- 2 eggs
- 1tbsp cottage cheese
- Fresh dille & mint
- Salt & pepper
- 2 tbsp coconut oil
Method:
1. Spread 1 tbsp coconut oil on sourdough bread on both side and roast until crispy.
2. Crack eggs in a bowl, whisk and add fresh dille, mint , salt and pepper
3. Turn on low heat on skillet and add coconut oil. When melted, add eggs mixture. Slowly scramble eggs towards the middle of the pan.
4. Turn of heat a minute before it’s done ( they always cook a little further after you turn off the heat)
5. Serve on toast with cottage cheese and add extra fresh herbs.
