To celebrate National Oatmeal Day I wanna share an extra special one! Oats are so versatile and this savory / sweet version will blow your mind, I promise.

Ingredients:
- 1 cup soaked oats
- 1tsp miso paste
- 1 tbsp tahini
- 1tbsp maple syrup
- 1/2 avocado
- Scallions & chives
- One egg
- Furikake topping
- Plant based milk
- Pinch of salt

Method:

1. Poach or soft boil the egg.
2. Mix a little water with 1 tsp miso in a small bowl.
3. Cook oats with plant based milk on low heat, add tahini and miso paste. Gently mix until cooked. Add 1 tsp maple syrup
4. Add oats to a bowl and top with egg, avocado, scallions, chives, maple syrup and furikake ( seaweed)
