My new favorite fall dinner recipe, easy and quick to make under 20 minutes! I love this recipe when I don’t have a lot of time but still want a well balanced meal. Eggs for protein, veggies for nutrients & sourdough bread for carbs.

- 1 medium onion diced
- 4 garlic cloves
- 1 red bell pepper
- 1 big can (28pz) peeled tomatoes
- 2 tsp paprika poeder
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 6 eggs
- Sourdough bread
- Handful feta
- Fresh parsley
- Salt & pepper to taste

1. Sautéed diced onions & red bell pepper until soft. Then add spices and garlic and stir for one more minute.
2. Add the can tomatoes and chop the tomatoes with a big wooden spoon.
3. Add the eggs and cook for about 7 minutes with lid on top.
4. Garnish with feta and parsley salt and pepper and enjoy!
