Taco Stuffed Veggie Boats What you need: ▫️Zucchinis (cut in halves) ▫️ Squash (cut in halves) ▫️ 1/2 cup Salsa ▫️ 1lb Lean Ground Turkey (or chicken) ▫️ 1 packet of taco seasoning ▫️ 1/2 Bell Pepper (chopped) *optional ▫️ 1/2 small Onion (chopped) *optional ▫️ 4oz can tomato sauce ▫️ Reduced fat shredded cheese *optional ▫️ Topped with fresh cilantro *optional ▫️ Low fat sour cream & 1tsp water mixed ▫️ @eatcleaner wash for veggies What todo: Preheat oven 400 degrees. Bring pot of water to boil. While that’s bringing to boil, place 1/4 cup of salsa on the bottom of a large baking dish. Clean all veggies thoroughly with @eatcleaner veggie wash. Using a spoon, scoop out the middle of the zucchini and squash and place the remaining aside (you will need this for your turkey taco mix) Drop both the zucchini and squash into boiling water for about 1-2 minutes. Remove from water. Brown ground turkey (or chicken) in large skillet, when almost cooked through add in chopped peppers, onions, reserved zucchini and squash, tomato sauce and taco seasoning. Simmer low for about 15-20 mins. Using a spoon, fill the empty “veggie boats” (zucchini and squash) with the taco meat mixture. Top with shredded cheese, cover with foil and bake for about 30 mins on 400 degrees! Finish with fresh cilantro and / or sour cream and serve with a side of salsa!
