For the cauliflower:
1 small head cauliflower, cut into thinly sliced florets (about 1/2 inch thick)
3/4 cup freshly grated parmesan cheese
2 1/2-3 tbs unsalted butter
1/2 tsp dried oregano
1/2 tsp garlic powder
I pinch ofsalt to taste, divided
1/2 tsp pepper, divided
1 tbsp olive oil
2 tbsp chopped parsley

1. Preheat the oven to 400.
Add the butter to a large casserole dish and place in the oven while it preheats to melt.
2. Mix the Parmesan, garlic powder, oregano, salt and half the pepper in a small bowl.
3. Chop florets of cauliflower into thin slices and then add cauliflower to a large bowl. add
the olive oil, remaining salt and pepper and the parsley. Toss to combine.
4. Remove the casserole dish from the oven, add the parmesan cheese mixture to the bottom of the dish and spread evenly.
5. Place the cauliflower florets into the dish, flat side down. Sprinkle any of the remaining parsley or cauliflower bits over the top, then sprinkle a little bit more parmesan cheese. Place in the oven for 30-35 minutes until the parmesan on the bottom has browned. Remove the dish from the oven and allow to cool for a few minutes.
6. While the cauliflower roasts, make the dip (I didn’t make the dip- I just used sour cream to dip and it was yummm) Add the sour cream or yogurt to a small dish, then add the salt, onion powder, parsley, chives and pepper. Mix to combine.
7. Place the cauliflower on a plate, top with parsley and serve.
