Doesn’t get easier than this! This isn’t traditional oyakodon but it’s just as delicious and comforting, and really just the perfect lazy recipe that my whole family loves. This is Easy Toddler-Approved Whole Family Recipes *Episode 3*, Rice Cooker Oyakodon (Japanese chicken & egg bowl)

Ingredients:
*1 pack of chicken thighs (mine has 4 pieces at 400g)
1 onion
marinade:
*1 cup japanese short grain rice – wash and soaked
*1/2 of a white onion, sliced into wedges
*1.5 tbsp coconut aminos (or soy sauce), chopped
*1 tbsp mirin type (this has less alcohol, but you can also use regualr mirin or 1 tbsp of water mixed with 1/2 tsp sugar)
*1 tsp brown sugar (or regular)
*½ tbsp neutral oil
*¼ cup water

Toppings:
*2 eggs (beaten 80%)
*1-2 green onion, sliced thinly
*seaweed, sliced thinly (optional)
*mizuna (optional- it’s a Japanese mustard green that adds a nice peppery flavour)
*sesame seeds
*you can add hot sauce, or chilli too

Method
1. wash and soak your rice with water at leas 30 minutes before cooking
2. chop chicken thighs and onion
3. mix the coconut aminos (or soy sauce), mirin, sugar, and oil to make the marinade
4. pour marinade on top of onion and chicken, mix well
5. strain as much water as possible from the rice.
6. add the 1/4 cup of water to the rice, and then the chicken & onion mixture on top.
7. cook on the regular white rice setting
8. prepare your desired toppings and the eggs (beaten to 80%)
9. When the rice is done quickly add the eggs without letting too much steam escape. Let the steam cook the eggs for 2-5 minutes (depending on how well done you like your eggs)
10. Serve with your toppings.
