ALWAYS always bleed your fish. You can do that by cutting it behind the gills, or even removing the gills all together. Fish blood has a « fishy taste » and you don’t want it to contaminate your filets. Do it as quick as possible too before it coagulates. Salt water, freshwater, your grandmas aquarium, it applies to all 😌
