One very simple tip to seriously elevate your cooking: the cartouche ✨

With the cartouche, steam can escape from the sides, allowing a steady, uniform heat distribution - the result is even cooking and no annoying skin on the top of your food

1️⃣ Grab some parchment paper

2️⃣ Fold into a point and cut in the middle on a curve

3️⃣ Open out into a circle, scrunch up (don’t miss this step!) and open back out into a circle before placement on the baking dish

That’s it!

I used this cartouche in my rootatouille (root veg ratatouille 🤩) - sweet, crispy sweet potato, celeriac and beetroot layered on a red lentil velouté
