Here are the ingredients you’ll need and what to do to create this masterpiece:

1. Preheat oven to 400 degrees.
2. Poke holes into your sweet potatoes and bake them on a baking rack for about 13-15 minutes (usually 45 min)
3. Remove from the oven. Slice them open, and scoop out some to make room for your stuffing.
4. While you wait for your sweet potatoes to cook; mix together greek yogurt with a squeeze of lime , salt and a bit of chile powder. Taste and adjust, making it as spicy/tangy as you like.
5. Mix in your black beans, pumpkin seeds
6. Sprinkle some chives on top and dig in.
