Braised Chicken with Fresh heirloom Tomatoes,Mushrooms and Chardonnay Wine Ingredients: ● 4 pieces of dark meat chicken thighs/drumsticks ● 3 small onions, cleaned and peeled ● 3 carrots, cleaned and peeled ● 2 cups of whole white mushrooms ● 1/4 cup Chardonnay Wine ● 1 big heirloom tomato,small dice ● 6 oz tomato paste ● 2 tbs coconut oil ● 1 sprig fresh rosemary ● 3 sprigs fresh thyme ● 4 cups chicken stock ● Sea salt and black pepper,as needed ● #FlavorGod Everything seasoning as needed Directions: 1.Heat the chicken stock in a sauce pot and remove from heat when it achieves a boil. Add mushrooms to the stock and cover sauce pot with a lid and let them sit for 30 minutes. Then remove mushrooms and drain them of their moisture.  2. Heat 1 tablespoon of coconut oil on medium high heat in a shallow pot and sauté onions for one minute. Sprinkle salt and pepper lightly on onions while cooking.Reserve onions on a plate.  3. Repeat step for carrots. 4. Discard oil in pot until only 2 tbs of oil remains if needed. 5. Sprinkle salt and pepper on both sides of each piece of chicken. Place chicken pieces in pot and sear both sides on medium high heat for 5-7 minutes. 6. Remove chicken and reserve on a plate. Lower heat to medium. 7. Add mushrooms,carrots,onions, diced tomatoes,and wine to pot and stir mixture thoroughly. Allow wine to reduce to 1 tablespoon. 8. Add tomato paste and stir elements for 5 min. 9. Add chicken pieces, rosemary, and thyme to the pot. 10. Pour stock into pot until liquid comes almost halfway up the chicken pieces. Lower heat to simmer. 11.Preheat oven to 350 degrees. 12. Sprinkle #FlavorGod Everything seasoning as desired on top of chicken. 13. Cover pot with lid or aluminum foil. Place pot in oven for 30 minutes.  14. Check doneness of chicken with instant read thermometer at 165 degrees. Adjust seasoning of sauce with salt and pepper. 15. Serve chicken on top of vegetables with sauce spooned on top. Enjoy!
