This #breadsgiving ... Its hard for me to believe it, but this week I've been trading every day. Every single day I spent some awesome quality time with fantastic and open folks. But meeting people is a one thing. What I love about this project is that I can bake more and master this craft, which is all about humble repetition, testing new options and looking for nuances between batches. I think Ive finally found my method. @natalie_tereshchenko has just sent me this picture from our todays trading. Its the bread made with 25% of graham flour (with brans sifted out) and 25% of pumpernickel flour, 91 hydration. I've been making it for some time, but yesterday I've changed my proofing method. I almost jumped into the space seeing this crumb and now I think I need to go running a bit to relief this joy. I hope I don't sound crazy. I just simply love, love, love this bread baking thing ;)
